"The only egg product we use is in our white wines where I use lysozyme to inhibit malolactic fermentation. The reds are straight up based on yeasts, yeast enzymes and have a little bit (<100ppm) SO2 for microbial stability.

Our product is unique to our winery (as I think you will find most wines). We make about 2000 cases annually and primarily sell it through the tasting room."
