' Con respecto a la solicitud de esta asociación de un documento donde se
certifique que no utilizamos productos de origen animal, huevos etc, os
presente las siguientes observaciones:
- Los únicos productos que utilizamos que pueden contener este origen
animal son las gelatinas para clarificación. No siempre, pero según las
necesidades las usamos.
- Las gelatinas, como clarificantes, son productos que su misión es
provocar coloides, es decir, que la "suciedad" del vino se junte y se
facilite la decantación de la misma.
- Tras la decantación en el depósito lo que se hace es separar la parte sucia (en el fondo del depósito) de la limpia, zona superior. Las gelatinas se quedan en la parte sucia, para desecho a la alcoholera.
Como conclusión, entiendo que partiendo del respeto a este movimiento, o ética vegana, esta informacióndebe ponerse en conocimiento de esta asociación para que tomen las decisiones que crean convenientes. El vino acabado, microfiltrado antes de ser embotellado (0,65 micras), en sí no contiene productos de origen animal pero sí ha entrado en contacto con ellos."
