"In the past we used honey for refermentation, some five years ago and before.That was for Stille Nacht and Boskeun. There were problems on possible use of antibiotics in honey.That and the huge work for getting the honey liquid at low temperature made us decide not to do that anymore;there was also a kind of special aging taste on those beers,maybe imaginative or not."
