"The only animal ingredient we use is fish gelatine to fining our wines (i.e. clarifying them) instead of making them go through a tight filtration process that strips them more. Similarly, fining (as opposed to filtration) preserves the proteins in the wine, which helps the wine to take on a nice foam."
