We exclusively employ bentonite for protein fining—never isinglass or any animal-derived products—and we complete every bottling with sterile filtration and/or cross-flow filtration. These practices ensure a clean, fresh, and aromatic profile in each wine, free from additives, concentrates, or shortcuts. Our approach is rooted in intentional farming, plant-based clarity agents, low-to-no sulfites, and minimal-intervention techniques that honor both craft and conscience."
