"Ben's right, we use no animal products. For clarifying, which is rare for us, we use Sparkolloid as needed, which is from algae, not animals. When we filter we cellulose sheets in a press filter. We use sulfites, occasional herbs for one cider, hops for one cider, and that's about it other than apples and sometimes other fruits such as pears, peaches, or quince. Nothing from animals or even bees. We talked about using honey, but so far we haven't done it and those plans haven't materialized, and I don't anticipate that we will. (Ben, did Amanda ever get set up with bee keeping?) We don't use any enzymes except pectic enzyme, which is derived from a mold. We don't use isinglass, gelatin, or egg whites for fining."
