"In general, I let people know that we can chose use egg whites to help with the winemaking process (fining) but varies from vintage to vintage/winemaker’s call.
Overall it seems to me we are not trying to be a vegan wine producer but we farm organically and try to manipulate the wine as little as possible during the winemaking process.
In addition to fining finished wines with egg whites, juice is often fined at harvest - especially in the cool/wet (and more disease prone) vintages such as 2019 and 2020. This can include casein and gelatin."
