"our enologists have reported all wines, during the clarification process, are used some animal gelatine, in order to make it more velvety in the mouth.
This is done for a lot of wines, not only for Santa Cristina wines.
These gelatines are filtrated totally (following the clarification).
Not always they disappear, in any case, in this specific case the residual is a small percentage."
