"The fining agent is a pure protein derived from fish, which has been used for centuries to clarify and improve the quality of the wine. Fining agents are used to reduce harsh tannins and remove several kinds of hazes common in wines.
The use of small amounts of fining agents is generally necessary to ensure that the wine will be clear and stable. Please note that despite using fining agents during the winemaking process, they are removed prior to bottling by settling and filtering out."

"We do use eggs to filter the wines. We are producers of both Chardonnays and Pinot Noirs. All our single vineyards wines are fermented and bottled at Acacia Vineyard. We do not have produce Acacia outside of the Carneros region.
We only pour wines that are limited editions or reserve here at the winery. There are two wines that are nationally distributed the Carneros Chardonnay and Carneros Pinot Noir."
