"Those are good questions. I can reply that our beer recipes contain only malts, hops, yeast, water, and sometimes sugar. In the brewing process at the Abbey, we add a couple salts (e.g., epsom, calcium chloride, gypsum, chalk) to most brews to enhance malt and hop flavors. We use Irish moss as a clarifier. Our yeast nutrient is from Wyeast. And that's everything that goes in.
"We have produced beers under contract at other breweries. They might use different salts, depending on their water. I've seen at least some of them use Irish moss. I'm not aware than any have used gelatin or isinglass."
