Company email (June 2013): "We do all of our own manufacturing. The only ingredients we have used thus far are barley, wheat, rye, oats, organic evaporated cane sugar, hops, and water. We may have future specialty beers that will use milk sugar (Lactose) and/or honey, but not at the moment. We use a red seaweed-based product (carrageenan) as a kettle fining (filter aid/protein coagulant). Our filters are preloaded cartridges that utilize a blend of cellulose (plant material), diatomaceous earth (DE), and perlite (synthetic DE). Just in case you are not familiar with it, and to help aid in your determination, DE is essentially fossilized diatomes (single celled organisms). They find diatomaceous deposits in the earth of desert areas where ancient lakes once existed. The "husk"/fossilized particle happens to have a significant conformational structure that aids in binding yeast, proteins, etc."
