"Gonzalez Byass uses egg albumin (egg white) to clarifie the Sherry wines before bottling. This egg albumin is eliminated by sedimentation and amicrobic filtration (0,45 ยต) just before bottling.
We have made analysis of albumin in Tio Pepe and it is not detected."
